We have a unique partnership with The Glenturret Distillery, arguably Scotland's oldest distillery based just outsied Crieff near Perth. We fill freshly emptied casks with our Scotch Ale, then seal them up and let them sleep up at the distillery. Once perfectly matured, a process which can take depending on 3-12 months depending on the cask, we bring them back to our brewery in StAndrews and condition the beers ready for bottling. The first time we went to taste these sleeping beauties, we had a 12 year and a14 year old cask full of our beer. The difference in the two beers was startling; one of them was bursting with dsark cherry and bramble flavours; the other cask had given a roasted coffee and bitter chocolate character to the beer. There was no way we were going to blend these two.
That day was the beginning of our single cask release barrel aged beers. The name for this project? Angels Be Damned. We're not sharing!
